Meatless Mondays

Whew its been awhile guys! I'd like to think that the long break was because I had writers block...but I'm not a writer. Maybe I've been really busy. But I'm actually not. However, I have enjoyed this free time!
So what do I do during the day when its not raining? I go to farmer markets, I clean, I cook, I go to yoga, I go to the pool, and I watch too much ID-TV. (It's addicting yall). That will change in a few short weeks though because I got a JOB! Yup, I am going to be a Pre-K teacher to sweet 4 and 5 year olds. Unfortunately because of the background check and my out of state license, I don't start until 4-6 weeks. But I am not complaining entirely....

In the mean time, I'll continue doing what I've been doing and enjoy the freedom of being free!

One thing I love in Asheville - The delicious food. This farm to table concept is really working for them. Also, it has inspired us to get a little healthier.It's easier to do when you have fresh food left and right, oh and the mountainous scenery helps with a more active lifestyle.

So, a new addition to our healthier lifestyle: Meatless Monday.

Are we vegetarians? Absolutely not. Wouldn't that be a sad life? Sorry veg-heads.But reading women's health I found this article, and we are always up for a new challenge! The benefits of going meatless one day a week definately out weigh the cons of it. No turkey sandwich for lunch, I can handle that. Veggies and pasta for dinner, why not! I am not going to act like I invented this day, I am only jumping on the bandwagon.

We are three weeks strong and I actually look forward to it because of the new recipes I try.

Here is one of our favorites:

Light Fettuccine Alfredo with Veggies

PLEASE MAKE THIS if you love fettuccine Alfredo like I do.


8 oz Fettuccine, uncooked
1 1/2 Tbs butter
1 1/2 Tbs flour
1 1/4 C milk
2 Tbs heavy cream
1 tsp lemon juice
Salt and garlic powder to taste
1/2 C parmesan cheese
2 oz cream cheese, diced (I used Neufchatel cheese, less fat)
Fresh chopped parsley
Extra Parmesan cheese for topping

Satueed vegetables of your choosing. I went with mushrooms, asparagus, and spinach.


Cook pasta and reserve about 1/4 cup of pasta water. 
Saute chopped veggies in a saucepan.
While cooking, melt butter in a another saucepan over medium heat. Mix in flour and cook, whisking vigorously until smooth. Stir in cream, lemon juice, salt and garlic powder. Stir til it thickens and begins to bubble.
Reduce heat and add in both cheeses, stirring until melted. If needed, stir in a few tbs of pasta water. Drain cooked pasta then pour into sauce and coat evenly. Pour in veggies. Serve and top with parsley, pepper, and parmesan cheese.

Whew. Talk about something crazy! Whoever thought I would enjoy being in a 110 degree room for 90 minutes, stretching til I think my muscles may tear. But it is addicting! The first five minutes, you get the immediate feeling where all you want to do is run for the door. But if you can make it past that...its the most rewarding feeling 90 minutes later!
