Go Vols Fruit Pizza

Last weekend we were excitedly awaiting Saturday. Why? Because College Gameday was coming to Knoxville for the first time since 2004! If you're a Vol fan...this is huge. Sadly, we were far too many states away to attend. So we made our home feel as much like tailgating in G-10 as we could. (Alumni lingo). 
You have no idea how hard it is to find orange napkins up here...

We even motivated four more Wisconsinites into cheering for the Vols. Orange clothing was provided by us.

Unfortunately, we lost to Florida. But I'd like to think that we would have won if the game ended at halftime. Either way...we had good food and that's half of what football is about.

And lastly...we definitely enjoyed eating this we were losing.

Fruit Pizza
1 1/2 Pillsbury Sugar Cookie Rolls
Cream Cheese Frosting (recipe I used below)
Mandarin Oranges
or anything you choose!

Roll out the cookie dough onto a pizza pan. Cook according to directions on package...mine took about 5 minutes longer in the oven. Wait and let cool completely. Spread cream cheese icing on top. Top with desired fruit and refrigerate until serving.

BJ's DELICIOUS Cream Cheese Frosting
8oz Cream Cheese, softened
1 stick butter, softened
2 tsp Vanilla extract
5 1/2 to 6 C powdered sugar

In large bowl, beat cream cheese, butter, and vanilla on med speed until light and fluffy. Gradually beat in sugar to reach spreading consistency. Cover and store remainder in fridge. 

This recipe is from my bonus-grandmother and it is a NO fail for cookies, cakes, pumpkin bread...anything really. I've never tasted any better!
